Abstract

Colombia has a representative gastronomic mix in each region, between these, rice bread, a typical product declared intangible cultural heritage of Meta department. This research seeks to carry out an organizational analysis of rice bread producers, focused on the municipalities of Villavicencio, Restrepo and San Martín, to contribute to the business strengthening of the sector. Within the framework of the participatory action research methodology, an organizational diagnosis is carried out to know the current situation of the business sector, and then propose strategies with the participation of actors involved. Among the main results is the characterization of the business sector in terms of internal and external factors, identifying differentiating elements in the business dynamics in the three municipalities, as well as strategies to respond to the problems identified, such as unfair competition, shortages of raw materials, low product promotion, weakness in the working conditions of employees.
